Banana Cake


Description:
This is an old recipe and it is loaded with calories so make it when you are having company. I got it out of an old Betty Crocker Recipe book from the late 50's-early 60's.

I did make this with half Splenda because I ran out of sugar and it worked fine. This is always better the second day.

Ingredients:
2 1/4 cups cake flour
1 2/3 sugar
1 1/4 teaspoons soda
1 1/4 teaspoons baking powder
1 teaspoon salt
2/3 cup shortening
2/3 cup buttermilk
3 eggs (1/2 to 2/3 cup)
1 1/4 cup of ripe mashed bananas
2/3 cup of finely chopped nuts (any kind)

Directions:
Heat oven to 350 degrees. Grease and flour baking pan, ( I have used a bunt pan or even cup cakes)13x9x2 inches or two 9-inch or three 8-inch round layer pans. Measure all ingredients into large mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes high speed, scraping bowl occasionally. Pour into pans.

Bake oblong 45 to 50 minutes, layers 35 to 40 minutes or until wooden pick inserted in center comes out clean, cool.

If desired, frost cake. I usually don't.
